So let's say I have a tray full of snack cheese. The tray is in the fridge. All that separates said cheese from the rest of the fridge is a piece of flimsy plastic.

Now, the temperature difference on the inside of the tray and the outside of the tray can't be that much, right?

But as long as you keep the tray closed - even after you open it - the cheese stays soft and supple.

When cheese is made, it's full of moisture. When you put it in the fridge, the temperature causes the moisture to evaporate, leaving behind a harder, more concentrated cheese. The process of evaporation is sped up when you open the package, because air can get in and more moisture can escape.
